Coconut Banana Muffins
Happy New Year! To celebrate I am bringing one of our favorite muffin recipes out to play- the coconut banana muffins! Seriously, these muffins disappear fast! Bonus- I have gone through and healthy-ized the recipe! (It is totally a word!)
The Super Food Sneak
It was quite a few years back I remember stumbling across a recipe somewhere for a type of coconut banana-ish muffin, and it was amazing! The only problem, it was full of super unhealthy ingredients and tasted amazing, which equals disaster if your self control isn’t so good. (Mine is next to none on baked yummyness.) So this week, I set about to make it slightly healthier, but still delicious. So there are a lot of healthier options that have been subbed in, like coconut sugar instead of processed white sugar, and so on.
A little note, while this recipe is healthier it isn’t so healthy it has lost its flavor, and more importantly if you eat the whole batch, well…you know. I hope that you enjoy this yummy coconut banana muffin recipe as much as we do! Seriously, we ate the whole batch in one day! 🙂
Yummy Coconut Banana Muffins
- 1/2 cup coconut oil
- 3/4 cup coconut sugar
- 3 medium bananas, smashed smash them really well, no "chunks"
- 1 teaspoon vanilla
- 1 teaspoon almond
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 cups flour I used a whole wheat, but use what you prefer.
- 1 dash salt
- 1 cup shredded coconut flakes I used half finely shredded, and half larger flakes.
- 1/4 cup coconut or almond milk
Preheat your oven to 325f.
Take three very ripe bananas and mash them...until there are no "chunks".
In a bowl, mix together the oil and sugar.
Add in the mashed bananas.
Next, add in the vanilla and almond.
Mix together your dry ingredients (except the coconut flakes) and add to the wet mixture.
Add the coconut or almond milk last, just to make the batter not as thick.
Then add in your coconut flakes and mix until just combined.
Spoon batter evenly into 12 muffin tins that have been greased or lined.
Bake for 22-25 minutes. Or until a toothpick comes out clean.
