This is the most basic recipe for overnight oatmeal that you are going to find! It will also be the cheapest! Overnight oatmeal is just oats soaked in milk overnight, it makes them soft and delicious! If you are like me, I always explode my oatmeal if I ever try to microwave it! And cleaning a microwave sucks!
Seriously, this is super fast to throw together at night. Take it out of the fridge in the morning and eat it straight or add a few toppings that you are in the mood for.
The Superfood Sneak
The super food in this recipe is chia seeds. These seeds are tiny, but pack a big punch! Chia seeds are high in fiber, protein, omegas, and lots of other little good things! They don’t really have a taste so it doesn’t flavor your food. They do have “gelling” properties which make them perfect egg replacements in recipes! (To make a “chia egg” one tablespoon chia with three tablespoons water is the equivalent of one egg.)

Alright, so the flavor! The reason I kept this recipe super basic is because I often don’t know what I will want in the morning, or the morning after that. So I like to make a super basic, generic batch of overnight oats, so I can have different toppings on different days.
You can absolutely eat this whole jar of oats yourself if you are super hungry, or want to take it to work for breakfast and lunch, or snack. I usually have it to split with my girls, and depending on how hungry they are, it will last one to two days. We love strawberries, coconut, and chocolate chips or blackberries and coconut. Feel free to add whatever your heart desires, fruit, nuts, nutbutters, chocolate…or eat it plain Jane!
- 1 1/2 cups Extra thick rolled oats
- 2 Tablespoons chia seeds
- 2 cups Nut Milk of your choice I usually do half almond milk and half coconut milk
In a quart mason jar, add all of your ingredients. (Optional sweetener of choice and vanilla.)
Shake it up really good and put in the fridge until ready to use (Overnight or longer- will last a few days in the fridge.)
When ready to eat, pour out desired amount and add toppings! Or eat straight from the jar!
Get crazy with your add ins! Nuts, nutbutters, fruit, chocolate chips...whatever you are in the mood for!
You can also enjoy this hot, if you heat it up in the microwave for just a few seconds, it doesn't have to "cook", just heat up.
