Carrot Cake Mimosa
Looking to add a little holiday to your upcoming brunches? How about a carrot cake mimosa? It is super amazing, has some great health benefits and…it has lots of whipped cream on top!
This mimosa came about by wanting to do a holiday twist to a favorite beverage. I think I was trying to go to sleep and this crazy idea popped into my brain! Is it just me, or does anyone else get some really good ideas just before falling asleep? Better yet, do you wake up in the middle of the night with an awesome idea and hope you can remember it in the morning? What followed this great idea night was many more nights of how to pull this off and make it good!
I am happy to report that I was able to get this carrot cake mimosa down, thanks to a few people who were willing (and not so willing) taste testers! You know who you are! Thank you for all your “sacrifice” and help!
As with a regular mimosa, this drink is half juice and half champagne. The juice is a mixture of three different kinds of juice and some spice that can be made in a large batch ahead of time. The spice will have to be shaken, not stirred…always wanted to say that! But seriously, shaken or blended to avoid chunks, nobody likes chunks!
To top off these delicious beverages, I used a cream cheese whipped cream. (If you don’t have this available/don’t want to make some, you can substitute a regular can of whipped cream or coconut whipped cream.) Candied pecan pieces, a cinnamon stick, and a spiral of carrot complete this carrot cake delight!
The Super Food Sneak
Being a carrot cake mimosa, one of the juices we are using is carrot juice. You can buy carrot juice from a store or juice your own for this recipe. Drinking carrot juice has amazing benefits, from being loaded in vitamins to boosting your immune system…seriously, if you are skeptical just run a quick search and you will see all the wonderful things it can do for you! What does that mean for you? Feel free to indulge on an extra mimosa, drink to your health! 🙂

Carrot Cake Mimosa
- 1 oz fresh carrot juice
- 1 oz fresh apple juice
- 2 oz fresh orange juice
- 1/8 teaspoon cinnamon powder
- 4 oz champagne/favorite bubbly
In a shaker or blender, mix all the juices together with the cinnamon. Shake or blend until well combined.
Pour juice into a champagne flute and add champagne.
Top with cream cheese whipped cream, candied pecans, a cinnamon stick, and a carrot spiral.
